Carin Lynch demonstrates a recipe on how to make cookies with pecan and carob chip.
It’s a traditional cookie but it uses carob chips instead of chocolate. It also uses partially refined sugar — turbinado. Also the recipe uses no refined flour.

Cookies Ingredients
Here’s the list:
• 1 cup whole wheat flour
• 1 cup whole wheat pastry flour
• 1 ½ tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 cup sugar (turbinado, coconut or Florida Crystals)
• 1 Tbsp Black Strap molasses
• ½ cup coconut oil (melted)
• 6 Tbsp water
• ⅓ cup cashew or almond butter (creamy style)
• 1 Tbsp vanilla
• 1 cup carob chips
• ½ cup chopped pecans
Step-by-Step Directions:
Step 1
49:20 – 49:38….. Whisk together flours, baking powder, baking soda and salt.
Step 2
49:40 – 51:10….. In a separate bowl, mix together sugar, coconut oil, water, nut butter and vanilla.
Step 3
51:11 – 51:54….. Add flour mixture to wet ingredients and combine.
Step 4
51:55 – 52:21….. Mix in carob and nuts.
Step 5
Let cookie dough sit at room temperature for an hour or more.
Step 6
Heat oven to 350 degrees.
Step 7
Portion with small cookie scoop onto parchment lines baking sheets about 1 inch apart.
Step 8
Bake 15 minutes until golden brown.
Step 9
Makes approximately 2 ½ to 3 dozen cookies.
