
Pulled pork is very popular for making sandwiches. The Bible tells us clearly not to eat pork.
Now you can make this vegan pulled BBQ sandwich (without the pork) with oyster mushrooms which are rich in antioxidants.
This is also great for those who are in a transition from meat eating to eating vegetarian or vegan diet.

Ingredients for Mushroom Sandwich
Here are the ingredients you need:
• ¼- ½ cup water
• 4-6 oyster mushroom stems
• 2 medium onions
• cup Homemade BBQ Sauce*
• Tbsp lemon juice
• Tbsp cumin
• tsp thyme
• ½ Tbsp garlic powder
• 2 Tbsp olive oil
• 4-6 Whole Grain Rolls
Step-by-Step Directions:
Step 1
20:16 – 22:17….. Before starting the recipe, cut off the lower tip of the oyster mushroom stem to remove the fibrous part. Shred the mushroom stems with a fork.

Step 2
17:50 – 20:15….. In an iron skillet sauté onions in ¼ water on medium high heat until onions begin to slightly brown. Add more water if needed.

Step 3
24:56 – 26:45….. Stir in mushrooms, Homemade BBQ Sauce, lemon juice and seasonings (cumin, thyme and garlic). Mix to combine.

Step 4
26:46 – 28:22….. Stir in 2 Tbsps of olive oil. Cook and simmer for 20 minutes on medium- low.

Step 5
Mix well and serve on your favorite whole grain rolls.
